Low Carb Dishes: Turkey Lettuce Cups

500g Lean turkey mince
2 x Shallots
2 x Garlic cloves
1 tbsp Rice vinegar
1 tbsp Soy sauce
1 tbsp Sesame oil
1 x Chilli
100g Mushrooms
2 tbsp Honey
1 tsp Grated fresh ginger
50g Fresh basil
2 x Romania lettuce
Salt and pepper

1. Mix all ingredients, except for the lettuce and mushrooms in a bowl and marinade in the fridge for 30 minutes.
2. Once marinated, fry in a pan on medium heat until turkey is cooked.
3. Add chopped mushrooms and fry until brown.
4. If the mixture is looking fry, add a little more soy sauce and sesame oil.
5. Season and taste.
6. Serve with lettuce leaves and spoon the mixture into each leaf, roll up and enjoy!
